The best healthy potato dish you will ever make!
SLiced Potato Heaven

This sliced potato dish mimics the decadent texture of scalloped potatoes, but with no dairy additives.
Yukon gold potatoes are my favorite potato to use in this dish, but you can substitute sweet potatoes to make this Paleo. Start with peeled potatoes and a mandolin. A mandolin is my favorite choice for slicing vegetables. Please always use cut proof gloves or a guard, I myself have learned this the hard way…a few times.
Next, slice up the potatoes and place in a large bowl with a small amount of olive oil and mix to distribute evenly. Then add the following spices: Kosher or Sea Salt, Black Pepper, Turmeric, and Paprika.
Next mix everything together and place the slices in mini bread pans or in a small casserole dish.
Bake at 400 degrees Fahrenheit for an hour and 10 minutes.
Enjoy as a side dish!
ingredients
2 lbs yukon gold or sweet potatoes
1/4 cup olive oil
1 tbsp of kosher or sea salt (add an extra tsp if you are using sweet potatoes)
2 tsp pepper
2 tsp paprika
2 tsp turmeric
Peel the potatoes and slice them with a mandolin about 1/8 inch thick.
Place them in a large bowl and pour over the olive oil and mix throughout.
Add the spices and mix evenly.
Stack potatoes standing up in a small casserole or mini bread pans.
Bake at 400 degrees Fahrenheit for 1 hour and 10 minutes.
